Frosting You Can Eat With A Spoon

A couple months ago, my beautiful grandmother turned 93. I was lucky enough to be able to bake for the party, and in doing so discovered this incredible frosting. White Chocolate Whipped Cream Frosting. It was actually more of an experiment gone very right. I used this frosting on a vanilla cupcake, topped with raspberries, but I am sure it would go great with many different cakes. I urge you to try this as soon as possible.

{White Chocolate Whipped Cream Frosting}

2 cups heavy cream

1 tsp pure vanilla extract

9 oz white chocolate

1/2 tbs sugar (if needed)

Bring cream to a slight boil. Once heated, pour over white chocolate and add vanilla. Stir until completely melted . Next, let the mix chill for 1-2 hours. The colder it is, the easier it will be to whip. Stir occasionally through out the cooling process to prevent film from forming. Once cooled, whip with an electric mixer at a medium speed. This should only take about 3 min. If needed, add sugar to give it an extra fluff.
