Gingerbread Cupcakes with Spiced White Chocolate Frosting

Simplicity does not describe these cupcakes, & it may be why I love them. Gingerbread screams Christmas, but as I get older it seems harder and harder to get into that Christmas spirit. So, to jump start my holiday heart, I thought what better way than gingerbread!

{Gingerbread Cupcakes}

1 1/2 cups flour

1 tsp baking soda

1/2 stick unsalted butter

1/4 cup buttermilk

3/4 tsp ginger

1 tsp cinnamon

Pinch nutmeg

Pinch salt

1/2 cup molases

2 eggs

1/2 cup sour cream

Preheat oven to 350. Prepare muffin pans with liners.

In medium bowl mix flour, salt, and baking soda. In a large bowl, combine butter, buttermilk, brown sugar, and spices until creamed. Beat in molases, and then one egg at a time. Mix in sour cream. Add dry ingredients until all is combined.

Place batter in pans. Bake for 30 min, or until tooth pick comes out clean.

Fold in one tbs of cinnamon after the frosting is made.
