Oatmeal Peanut Butter Cookies

These cookies are taking two very well known favorites, and turning them into one. The only thing that could possibly make them better is some chocolate, which I am bound to try with my next batch. With any peanut butter cookie, I have found that they always get thin and crispy; I could never get them quite right. With these, I think the oats add some “umph” (yes, that is an adjective). Try them out and let me know what you think!

{Oatmeal Peanut Butter Cookies}


1 cup unsalted butter (room temp)

1 cup brown sugar

3/4 cup white sugar

1 cup plus 1 tbs peanut butter

2 eggs

1 tsp vanilla

1 1/2 cup all purpose flour

2 tsp baking soda

1 tsp kosher salt

1 1/2 cup quick cooking oats

Preheat oven to 350 degrees F

In a small bowl, combine flour, baking soda, and salt; set aside.

In a large bowl, cream together butter, both sugars, and peanut butter until smooth. Add in eggs, one at a time, and then vanilla.  Once all is combined, add dry mix to the wet. Mix in oats until well combined.

Drop onto an ungreased cookie sheet and bake for 10-15 minutes. Enjoy!
