Vanilla Chai Cupcakes with Cinnamon Buttercream Frosting

As I sit here and watch Julie and Julia, I am inspired to share a much requested recipe. I first came across this wonderful recipe on the beloved Pinterest, and knew I had to try it. The combination in cupcakes & tea is beginning to be one of my favorites.

{Vanilla Chai Cupcakes}

Chai Spice Mix:

1.5 tsp ground cinnamom

1.5 tsp ground cardamon

1/2 tsp ginger

1/4 tsp cloves

1/4 tsp nutmeg

Cupcake Batter:

1/2 cup butter

1 cup sugar

2 tsp pure vanilla extract

2 eggs

2 tsp chai spice mix

1 1/4 cup flour

1/2 cup buttermilk

1/2 tsp baking soda

1/2 tsp apple cider vinegar

Buttercream

1 cup butter, softened

1 tsp pure vanilla extract

2 cups powdered sugar

remainder of chai mix

1 tbs. cold milk

Directions

Preheat oven to 325 degrees.

In a small bowl, combine chai spice mix. Set aside.

Cream together butter and sugar. Add vanilla, and beat in one egg at a time. Stir in 2 tsp of the chai spice mix. Alternate folding between adding buttermilk and flour until completely combined. Mix together vinegar and baking soda in separate bowl, and then add to mixture.

Place mixture into prepared muffin pans. Recipe makes 16-18 cupcakes. Bake for 17-20 minutes.

Cinnamon Buttercream:

With electric mixer, beat butter until creamy (about 3 minutes). On low, mis on vanilla and chai spice mix. Carefully beat in powdered sugar, 1/2 cup at a time. If the buttercream is too thick, add milk. Frost cupcakes once cooled.
