Coconut Rum Cupcakes

I know its only February, but today was one of those days where sitting on the beach with a tropical beverage in hand sounded amazing. The first thing that comes to mind when I think of tropical, is of course, coconut & rum.

I began with a recipe from Ming Makes Cupcakes and slightly altered it. I absolutely love everything about these cupcakes. The cake is a perfect match for the frosting, as it is not too sweet, but the frosting makes up for that. I urge any coconut lover to try these!

{Coconut Rum Cupcakes}

Ingredients 

2 cups flour

1 tsp baking soda

1/2 tsp salt

1 1/4 cups brown sugar

1 stick butter

1 egg

1 cup buttermilk

1/2 cup Coconut Rum

1/2 cup of Sweetened Coconut Flakes

Frosting

4 oz cream cheese

1/2 stick butter

2 cups powdered sugar

3-5 tbs of rum

Coconut flakes for topping

Directions

Pre-heat oven to 375 degrees F. Line 2 cupcake pans.

Mix together flour, baking soda, and salt in a medium bowl. Put aside, and mix together in a large bowl brown sugar and butter until smooth. Add egg until creamy. Alternate between adding buttermilk and dry ingredients until fully incorporated. Add rum. Fold in coconut flakes. Bake for 20 min, or until tooth pick comes out clean.

Frost cupcakes after cooled, and garnish with coconut flakes.
