Double Chocolate Chunk Cookies

Hello all!  As I sit here on this Sunday morning, I have the need to end this weekend on a sweet note. Before the crazy hustle and bustle of monday morning begins, putting my mind in a sweet, chocolatey place just seems more than appropriate. These cookies are very similar to my Chocolate Chip cookies, but just by adding Ghirardelli cocoa. Hope that you try these and satisfy that sweet tooth you have been fighting all week! Enjoy!

{Double Chocolate Chunk Cookies}

2 sticks (one cup) unsalted butter, softened

3/4 cup brown sugar

2 eggs

1 tsp pure vanilla extract

1 small package instant vanilla pudding mix

1/3 cup cocoa

2 1/4 cup flour

1 tsp Kosher salt

1 tsp baking soda

1 Ghirardelli 60% cocoa bar. chopped. (Or chocolate chips, which ever you prefer)

Preheat oven to 350 degrees. In a large mixing bowl, mix brown sugar and butter until smooth. Add in eggs, one at a time, followed by vanilla. Once combined, add vanilla pudding mix. Once blended in, add cocoa. Set aside, and in a small bowl, mix flour, salt, and baking soda. Slowly add the dry ingredients, to wet. When all is mixed, fold in chocolate chunks.

Bake for  9-12 min. Let cool on cooling rack, and indulge!
