Mondays Muffins: Banana Almond

Last Monday, I had that comman urge to bake, but decided it needed to be something a little healthier than something with chocolate chips, or frosting. Lets get real, a muffin is nothing far from a cupcake un-frosted, but this does have fresh banana and almonds, so it has to have some benefit, right?! Goes great with a good cup of coffee. Enjoy!

{Banana Almond Muffins}

2 1/2 cups flour

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 cup sugar

4 over ripened bananas

1 1/2 sticks melted unsalted butter

2 eggs

1 tsp vanilla extract

1/2 tsp almond extract

1/2 cup sliced almonds


Pre-heat oven to 375.

Mix flour, powder,soda, and salt in a medium bowl and set aside. In a large bowl, slice and mash bananas. Add sugar and extracts, and mix well. In another seperate bowl, lightly whisk eggs, and then mix in with the banana mixture. Melt butter in microwave, and after letting it slightly cool, add to wet ingredients. Add dry ingredients slowly to the banana mixture until it is completely combined. Gently fold in almonds. Scoop into lined muffin pans, should make up to 20 muffins. Bake for 20 mins.
