The Perfect Ganache

{Ganache}: a glaze, icing, or filling for pastries made from chocolate and cream.

It is as simple as it sounds, but as rich as your favorite truffle. My general definition of Ganache is chocolate heaven. Once I began using ganache, it was hard to imagine topping a dessert with anything else. You can top cakes, dip fruit, eat with a spoon… the options are endless. The following recipe is my favorite way of making ganache.

Directions:

Bring one cup of heavy whipping cream to 180 degrees F, at a slight boil. Pour over 8-9 ounces of semi-sweet chocolate. Stir from the center, and make your way out until chocolate is dark and shiny. Let cool for about 10-15 min before using.
